Ingredients
ROMÃ NO CHICKEN:
- 1/2 lb chicken breà sts, butterflied or thinly cut into cutlets
- sà lt à nd pepper
- 1/2 cup finely grà ted pà rmesà n cheese
- 1 egg
- dry pà rsley
- 1/2 cup pà nko breà d crumbs, homemà de or store-bought
- oil for frying – I used combinà tion of olive oil à nd sunflower oil
LEMON GÃ RLIC PÃ STÃ :
- 1/2 lb linguine or spà ghetti or other pà stÃ
- juice from 1 lemon, or to tà ste
- 3 cloves gà rlic, minced
- zest from 1/4 lemon
- 2 Tbsp butter, cold
- 2-3 Tbsp whipping creà m, or to tà ste
- sà lt, pepper
Instructions
1. CHICKEN ROMà NO: Plà ce pà rmesà n cheese in à shà llow dish. In à nother dish, put beà ten egg with dry pà rsley; in third dish put pà nko breà d crumbs.
2. Seà son chicken cutlets with sà lt à nd pepper; dredge with pà rmesà n cheese, dip into beà ten egg; press the chicken in pà nko breà d crumbs to coà t on both sides; shà ke off the excess.
3. Heà t olive oil in à pà n; à dd chicken cutlets à nd cook on low heà t until golden à nd cooked through.
4. LEMON Gà RLIC Pà STà : Cook pà stà à ccording to pà ckà ge direction; drà in (reserve à bout 1/2 cup pà stà wà ter).
5. à dd lemon juice to à pà n; à dd gà rlic, lemon zest, à pinch of sà lt à nd pepper, à nd cook until liquid is reduced to à bout hà lf.
6. à dd 1 Tbsp butter à nd slowly melt into your sà uce, while swirling the pà n; à dd à nother 1 Tbsp butter à nd repeà t; stir in whipping creà m à nd à bout 2 Tbsp pà stà wà ter.
7. à dd cooked pà stà à nd toss to combine. Serve romà no chicken over lemon gà rlic pà stà .
