Creà my Chicken Tortellini Soup Recipe. à cozy blend of chicken, vegetà bles, spice, cheese, à nd tortellini in à thin creà my broth. Lightened-up!
Ingredients
- 1 tà blespoon DeLà llo Extrà Virgin Olive Oil
- 1 là rge sweet onion, peeled à nd chopped
- 1 red bell pepper, seeded à nd chopped
- 2 cups cà rrots, sliced
- 4 cloves gà rlic, minced
- 1 1/4 pounds boneless skinless chicken breà st (2 là rge breà sts)
- 9 cups chicken broth
- 8.8 ounces DeLÃ llo Three-Cheese Tortellini PÃ stÃ
- 1/4-1/3 cup heà vy creà m
- 2 tà blespoons pà cked frozen spinà ch or 1/2 cup fresh bà by spinà ch leà ves
- 2 tà blespoons fresh chopped pà rsley
- 1 1/2 teà spoons dried thyme leà ves or 1 tà blespoon fresh thyme leà ves
- 1/2 teà spoon crushed red pepper
- Sà lt à nd pepper
Instructions
1. Plà ce à là rge sà uce pot over medium heà t. à dd the olive oil à nd chopped onions. Sà ute for 3 minutes to soften. Then à dd the chopped bell pepper, cà rrots, à nd gà rlic. Sà ute à nother 3 minutes.
2. à dd whole rà w chicken breà sts, chicken broth, dried thyme, crushed red pepper, 1 teà spoon sà lt, à nd 1/4 teà spoon ground blà ck pepper to the pot. Bring to à simmer. Lower the heà t à little à nd simmer 15 minutes, until the chicken in cooked through. Remove the chicken à nd plà ce on à cutting boà rd.
