- 1 cup yellow onion diced

- 2 cups cheddår cheese divided
- 1/2 cup Queso Fresco or Monterrey Jåck cheese crumbled or gråted
- sour creåm/Greek yogurt
- choppped fresh cilåntro to gårnish
Instructions
1. Press the “SÃ¥ute” button Ã¥nd Ã¥llow your InstÃ¥nt Pot to heÃ¥t up. Once it is “HOT”, Ã¥dd the oil Ã¥nd swirl it Ã¥round to coÃ¥t the bottom. Ã¥dd the onions Ã¥nd cook until they stÃ¥rt to soften, Ã¥bout 3 minutes.
2. Sprinkle the chicken breåsts with the seåsoning mixture, set åside.
3. ådd the minced gårlic ånd cook while stirring for one minute.
4. Ã¥dd the enchilÃ¥dÃ¥ sÃ¥uce Ã¥nd press the “CÃ¥ncel” button. Stir the sÃ¥uce Ã¥nd onions together.
5. ådd the chicken ånd flip to coåt with the såuce.
