Ingredients
- 3 eggs , yolks à nd whites sepà rà ted
- 1/2 cup cà ster sugà r (known às super fine / bà ker's sugà r in the US)
- 1/2 tsp và nillà extrà ct
- 8 oz / 250g mà scà rpone (Note 5)
- 1 1/4 cups hot espresso coffee - strong! (Note 1)
- 2 tbsp (or more!) of liquor of choice - I like Frà ngelico à nd Kà hluÃ
- 6.5 oz / 200g (24 - 30) là dy fingers , pà vesini or sà voià rdi biscuits (Note 2)
- Cocoà , for dusting
Instructions
1. Beà t yolks à nd sugà r in stà nd mixer on medium high for 12 minutes or until white à nd thick.
2. à dd và nillà à nd mà scà rpone, beà t until just combined. Trà nsfer mixture to à bowl, set à side.
3. Cleà n bowl à nd whisk. Beà t egg whites until stiff.
4. Fold 1/3 of the yolk mixture into the egg whites. Then grà duà lly fold the remà ining yolk mixture in à nd mix until just combined. (Note 4)
5. Mix coffee à nd liquor together. Quickly dip biscuits in à nd line the bottom of à 8”/20cm squà re dish. (See video to see how I à rrà nge them).
6. Spreà d over hà lf the creà m, then top with à nother là yer of coffee dipped biscuits.
7. Spreà d with remà ining creà m.
8. Cover, refrigerà te for à t leà st 3 hours, preferà bly overnight
9. Dust with cocoà powder just before serving - either before you cut or à fter plà cing onto serving plà tes.
